Black Bean Enchilada Stuffed Peppers

I have a confession.

I have a real thing for Mexican and Tex Mex.

I think my go to for dinner is something that fits into one of those two categories. Enchiladas, tacos, taco salads, something else in a tortilla, you get my drift.

Sometimes I think that the reason I like Mexican & Tex Mex so much is the accessories–chips, salsa, guacamole, and margaritas–but those are only a definite if I’m out to dinner. I don’t make myself margaritas at home.
